Fresh Milled Oatmeal Chocolate Chip Cookies

Oatmeal chocolate chip cookies are my favorite, especially with nuts! Growing up my Mom called these Neiman Marcus cookies, I have also heard them called Cowboy Cookies – you call them what you want, just make them! Perfect for filling the cookie jar!

Fresh Milled Oatmeal Chocolate Chip Cookies

Take your cookies to the next level by using fresh milled flour & no refined sugar! These cookies are meant to be big. They will spread so even if you choose to make them smaller, leave room on your baking sheet.

Ingredients

  • Scant 5 cups fresh milled soft wheat flour
  • 2 1/2 cups rolled oats
  • 1/4 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup maple sugar
  • 1 cup coconut sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup refined coconut oil, melted
  • 1 stick butter, softened for DF use 1/2 cup earth balance, melted
  • 1/4 cup walnuts, chopped
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350F

    In the bowl of a stand mixer or mixing bowl, place melted coconut oil, butter, & sugars. Beat until combined & creamy.

    Add eggs, & vanilla, stir until incorporated. It should be light in color & fluffy.

    Turn off mixer and add the dry ingredients EXCEPT the oatmeal, nuts & chocolate chips. Stir until just combined.

    Add the oatmeal, chocolate chips, & walnuts, stir until incorporated.

    Prepare a 13×18 baking sheet. Place large spoonfuls of dough (approx 3 TBS) on the baking sheet leaving space for each cookie to spread. You should be able to fit 4 cookies on each pan.

    Bake 15-18 minutes, let cool 1-2 minutes on the baking sheet & then remove to a cooling rack.
