Gluten Free Bread

Ingredients

  • 2 eggs
  • 2 tsp apple cider vinegar
  • 1/4 cup olive oil
  • 3 cups gluten free flour I use King Arthur 1-1
  • 2 tsp baking powder
  • 2 tsp instant yeast
  • 3 TBS honey
  • 1/2 tsp xanthum gum
  • 1 1/2 cups warm water

Instructions

  1. In a glass bowl or measuring cup, place warm water & honey, stir until honey is dissolved. Add yeast, stir & set aside until foamy, about 10 minutes.

  2. Whisk all dry ingredients in another bowl and set aside.

  3. In the bowl of a stand mixer, place remaining wet ingredients, stir a few minutes until combined. Add yeast mixture, stir for 15 seconds.

  4. Slowly add the dry ingredients to the wet mixture. Being careful not to spill. Turn the mixture to medium/high and stir for 3 minutes. The dough will be very sticky.

  5. Grease a 9x5 loaf pan & using a spatula, place dough in pan. Smooth the top to make a uniform looking loaf. Set your oven to warm or if you do not have a warm setting, turn on your oven light and leave the door closed. Cover the loaf pan with a damp towel or paper towel and place in the warm (but not hot) oven. Let rise for 20-30 minutes being careful not to let it over rise. It will rise some more during baking.

  6. Take the loaf pan out of the oven and preheat the oven to 375 degrees F.

  7. Bake for 35-45 minutes depending on your oven. Loaf should be a golden brown.

  8. Do not let the loaf cool in the pan. Carefully place the finished bread on a cooling rack and let cool completely before cutting. If you do not allow it to cool you will get a gummy loaf of bread.

  9. Slather with butter and enjoy!
