I can take no credit for the recipe I am about to share. My sister is the genius behind this amazing loaf of gluten free bread. Like me, she LOVES bread so when she needed to eat gluten free for a time she went on a mission to find a good gluten free bread recipe that she could make at home. She tweaked, and changed, and added, and finally came up with this beauty! I seriously could not believe what a bread like texture this loaf has – it is so good!
It looks like a regular piece of bread!! Make this for your friends and family at a holiday gathering and I guarantee you will get compliments. I used King Arthur gluten free measure for measure flour but you can try other gluten free 1-1 flour options.
This bread can also be used to make gluten free dressing for your Thanksgiving meal. Just cut the cooled bread into medium sized cubes, place on a baking sheet and leave on your counter, covered, overnight to let it dry out. Alternatively, you can toast the cubes in a 350F oven for 15 minutes. Use this in place of the regular bread in the dressing recipe.
Gluten Free Bread
Ingredients
- 2 eggs
- 2 tsp apple cider vinegar
- 1/4 cup olive oil
- 3 cups gluten free flour I use King Arthur 1-1
- 2 tsp baking powder
- 2 tsp instant yeast
- 3 TBS honey
- 1/2 tsp xanthum gum
- 1 1/2 cups warm water
Instructions

In a glass bowl or measuring cup, place warm water & honey, stir until honey is dissolved. Add yeast, stir & set aside until foamy, about 10 minutes.

Whisk all dry ingredients in another bowl and set aside.

In the bowl of a stand mixer, place remaining wet ingredients, stir a few minutes until combined. Add yeast mixture, stir for 15 seconds.

Slowly add the dry ingredients to the wet mixture. Being careful not to spill. Turn the mixture to medium/high and stir for 3 minutes. The dough will be very sticky.

Grease a 9×5 loaf pan & using a spatula, place dough in pan. Smooth the top to make a uniform looking loaf. Set your oven to warm or if you do not have a warm setting, turn on your oven light and leave the door closed. Cover the loaf pan with a damp towel or paper towel and place in the warm (but not hot) oven. Let rise for 20-30 minutes being careful not to let it over rise. It will rise some more during baking.

Take the loaf pan out of the oven and preheat the oven to 375 degrees F.

Bake for 35-45 minutes depending on your oven. Loaf should be a golden brown.

Do not let the loaf cool in the pan. Carefully place the finished bread on a cooling rack and let cool completely before cutting. If you do not allow it to cool you will get a gummy loaf of bread.
