Ginger Creams

 

In preparation for starting the GAPS diet I have been making all kinds of foods to have ready especially for the days when I don’t feel good. Our favorite so far are what my kids are calling ginger creams. These little yummies are a treat on the GAPS diet. They will help keep our morale and our blood sugar balanced.   🙂  They would be a tasty treat even if you aren’t on the GAPS diet though. Like any sweet you want to make sure and have just a few so you don’t spike your blood sugar and lose all the benefit.

I have seen many versions of these delicious candy-like treats. I tried a few and didn’t like the results so I came up with my own version. I added ginger and mineral salt to the usual coconut oil and honey. The key to making these is to use a blender. I have made them by hand and they end up separating in the mold and then you have a layer of coconut oil and a layer of honey- this make it hard to get out of the mold and makes them harder to store.

  • 1 cup coconut oil melted (you can use refined or unrefined based on whether you want a coconut taste, I like them either way but my husband prefers the neutral version)
  • 1 (2 inch) piece of ginger, peeled (you can use more if you really want a ginger taste)
  • pinch of mineral salt, about 1/16 of a tsp
  • 1/2 cup honey (this sounds like a lot but keep in mind that this is one of the few sweet things you will be having on the diet)

Place all ingredients in a blender. I have a Vitamix so I can put the ginger in just as a chunk, if your blender isn’t as strong you may want to grate it first. Blend all the ingredients until well combined. Using a small syringe (mine came with my gummy molds) place the liquid in the molds. You may need to re-blend as you go if the mixture starts to separate. This really is key to having a uniform treat without layers. Keep the mixture blended. Place the molds in the freezer or refrigerator until hardened. Once they have hardened, take them out and store in a container in the fridge. Try not to eat them all at once!!
